I am the undisputed king of quick-cooking meals! I mean, you put this stuff in the oven, go shower, come back and dinner is ready. Here’s one of my favorite go-to quick dinners. Enjoy!

 Ingredients

1/2 pound of salmon fillets (2 good sized fillets)

1/2 tablespoon of Kosher salt

1/2 teaspoon of fresh cracked black pepper

2 tablespoons of brown sugar

1 tablespoon of olive oil

Directions

1. Preheat the oven to 400 degrees.

2. Pour the oil in the bottom of an oven-proof dish (preferably something with low sides so the heat of the oven can really get to the fish).

3. Season the fish liberally with salt, pepper, and top it with the brown sugar mixture. Then, place the fish in the dish skin side down.
4. Roast for about 15-17 minutes, or until your desired temperature is reached. I like my fish somewhere between medium and medium well.
I served this with salt and pepper roasted asparagus. So simple. I took a pound of fresh asparagus and trimmed the stems. I tossed the asparagus with salt, pepper and olive oil, and roasted in a 400 degree oven for about 10 minutes!
